Ingredients
300 g All Purpose Flour
70 g Instant Vanilla Pudding Mix (Jell-O)
1 tsp Baking Soda
1/2 tsp Salt
227 g Unsalted Butter, melted
150 g Brown Sugar
67 g Castor Sugar
2 Eggs
2 tsp of Vanilla Extract 262 g Semi sweet Chocolate Chips 113 g Milk Chocolate, broken into small pieces
Instructions
Dry mix together the flour, pudding mix, baking soda and salt, and set aside.
In the bowl of a standing mixer fitted with a paddle attachment, cream together the butter with both kinds of sugar for about 2 min on medium speed until pale and fluffy
Add the eggs and vanilla gradually and continue to mix for 2 min.
Add the dry ingredients along with both kinds of chocolate and continue to mix slowly just until they are incorporated.
Place the dough in a bowl, cover and pop in the fridge for 1 h.
Preheat your oven to 190 °C, line a few baking sheets with parchment paper and set aside.
Portion out 40 g cookie dough per piece and place them a couple inches apart on your prepared baking sheet. Flatten them and pop them in the oven to bake at 190 °C for 10 - 12 min or until golden at the edges and allow them to cool on wire racks before serving.
