Chocolate Scones

Yield: 6 scones



Ingredients

250g Cake flour

10g Baking powder

25g Sugar

2g Salt

100g Cold unsalted butter

100g Cold milk

60g Melted chocolate


1 Egg yolk + 10g Milk


Instructions

  1. Add baking powder, sugar, and salt to the cake flour and roughly mix together

  2. Add cold unsalted butter, and mix/cut with a scraper until butter forms small lumps in the mix

  3. When the butter is mixed with the flour and the size is small, add cold milk and lump them together.

  4. Move it to the workbench, push it flat. Apply melted chocolate, fold it in half and flatten it again.

  5. Repeat 2 more times, layering the chocolate between the dough.

  6. Harden in the freezer for about 1 hour.

  7. Cut the edge of the dough, divide it into 6 parts. Place it on an oven pan, and spread the mixture of egg yolk and milk over the top.

  8. Bake for 18-20 minutes in an oven preheated to 190 C.
