Yield: 4 Rolls
Ingredients
Sauce
1 tbsp Caster sugar 1 tbsp Honey
3/4 tbsp Light soy sauce
1/2 tbsp Oyster sauce
1/4 tbsp White vinegar, or cider vinegar
1/2 tsp Sesame oil
1/2 tsp Garlic Chilli (Mcdonalds)
Batter
1 Egg
150 g Water
80 g All purpose flour
20 g Corn starch
1/4 tsp Salt
15 g Chopped scallion
Filling - mix and match up to you
4 Eggs
Cheese
Pork floss
Ham
Mayonnaise
Ketchup
Instructions
Sauce
Combine all the sauce ingredients in a small pot. Stir and bring to a boil then remove from heat.
Batter
Add all dry ingredients into a bowl and mix well.
In a small well in the middle of the dry ingredients, add eggs and water and mix well.
When everything is well mixed, add scallions.
Oil and heat a non-stick frying pan over medium heat before pouring in the batter (3/4 scoop per crepe). Wait till well cooked and slightly browned before flipping. Cook on the other side slightly before flipping back.
Mix an egg in a separate bowl and pour over the crepe. Wait till slightly set before flipping and cooking slightly before flipping back again.
On the side covered with egg, spread sauce all over and top with desired toppings in a row at one end of the crepe.
Once bottom adequately browned, start to roll up the filling to create the roll, pressing down on the roll to ensure it holds together.
Transfer roll to a chopping board and cut up as shown.
