Ingredients
250 g All Purpose Flour
125 g Unsalted Butter
5 g Salt
12.5 g Semi-dry yeast
50 g Whole Eggs
12.5 g Icing Sugar
150 g Whole Milk
125 g Nib Sugar
Instructions
Dissolve yeast into the milk and add the eggs.
Using a dough hook, mix with the dry ingredients except for nib sugar; knead until a smooth dough is obtained.
Add the butter and knead again until a smooth and elastic dough is obtained.
Rest the dough for 30 min in the same bowl.
Add the nib sugar and mix in with dough hook.
Flour table slightly. Divide dough into 40 g portions and shape it on slightly floured surface and with floured hands.
Proof for 1-2 h in fridge.
Cook in a waffle machine (setting 2.5) brown on one side (2 min) flip and continue (45 sec).
