Cherry Tomato Butter Pasta

Yield: 2 pax portion


Ingredients

180g Pasta of choice - Linguine, Fettucine etc


250g Cherry Tomato (ideally a little more ~350g), sliced into halves

3 cloves Garlic

1/2 medium Onion

Pine Nuts

50g butter


Chopped Parsley

Chopped Basil

Chicken

Burrata


Instructions

  1. Slice cherry tomatoes in half, and dice the garlic and onion

  2. In a large pan, saute the garlic, onion and pine nuts in the butter for 5 minutes over medium-low heat or until onions become soft and translucent and pine nuts become toasted

  3. Add cherry tomatoes to the pan and season with salt. Cook over medium heat for ~20-30minutes (stir frequently and squish tomatoes as they are being cooked - cherry tomatoes will burst and soften and butter will completely blend in with tomatoes)

  4. Season pasta sauce to taste (salt, pepper, sugar (to combat acidity of tomatoes if needed))

  5. Bring a large pot of salted water to boil and cook pasta as per instructions

  6. Add the cooked pasta to the sauce and toss to coat.

  7. Add in parsley, basil, shredded chicken and burrata and mix

  8. Serve with grated parmesan cheese.
