Miso Mayo Baked Salmon

Yield: 2 pax



Ingredients:

2 pc Salmon (roughly 150-250g per piece)

1 packet Mushroom (Shimeji, can also try Enoki or King Oyster), pulled apart or cut up

1/2 medium Onion, sliced

Spinach


1/2 tbsp Miso

1/4 cup Mayonnaise

Spring Onion, sliced

Butter

Cheese (Cottage cheese, Mozarella)


2 Aluminium foil packets, folded


  1. Oil both aluminium foil packets

  2. Place onions, mushroom and spinach within packets Season slightly

  3. Season raw salmon and place within packets (one in each packet)

  4. Mix miso and mayonnaise in separate bowl, and top salmon

  5. Place sliced spring onion and a pad of butter on top of each salmon and wrap up the aluminium foil packets

  6. Bake at 200 °C for 12-19 min depending on salmon thickness (100g ~12-15min, 250g ~16-19min)

  7. Once done, tear open aluminium foil packets and top with cheese, then torch it to melt/brown the cheese

  8. Serve with rice
